KWAJ CASSEROLE by Becky Hughes

Brown 1 lb. (or a little more) hamburger with chopped onion and bell pepper. Add ½ pkg. cooked, small shell macaroni and 1 can beef gravy. Pour in greased casserole and top with grated cheese. Brown in moderate oven.

KWAJ BACHELORS' STEW Bachelors’ Stew as remembered by Jim Watt. Kwaj 1975-83
  • 2 cups steamed white rice
  • 2 lb. hamburger cooked and drained
  • 1 can Campbells mushroom soup
  • 1 medium sweet onion [chopped finely]
  • 4 tablespoons soy sauce
  • 2 tablespoons hot sauce
  • Sea salt and black pepper to taste

    [Tinker to your taste with recipe amounts!]  Cook all ingredients then combine in a large bowl. Stir well and serve with hot French bread, garlic butter and a tossed salad.

BASIC ISLAND TOSSED SALAD by Jim Watt. Kwaj 1975-83
  • 1 large head shredded chilled lettuce
  • 2 lb large shelled and cleaned boiled shrimp
  • 4 large fresh mushrooms chopped
  • 4 large avocados peeled and quartered
  • 4 large fresh tomatoes quartered
  • 1 small chopped sweet onion
  • 1 lb shredded sharp cheddar cheese
  • 4 tablespoons raisins

Mix all ingredients thoroughly together.  Serve with Italian or ranch dressing.

HAMBURGER STROGANOFF by Shermie Wiehe. Kwaj 1972-78, 1981-92, 1992-97
  • 1 pound of Hamburger
  • 1 large onion, halved and sliced
  • 1 garlic clove, finely chopped
  • 8 ounces sliced mushrooms (1 cup)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon of salt and pepper
  • 1 1/2 cups fat-free sour cream
  • 3 cups hot cooked egg noodles
  • 2 cans of Cream of Mushroom, no water

Preparation:  Pre-cook hamburger, mushrooms, Cream of Mushroom, onion, salt and garlic, removing grease, and then cook until hamburger beef is cooked and onions are tender. Remove from heat and add your pre-cooked noodles and stir in, then add the sour cream; stir to blend.  Ready to serve.

 JIM WATT'S KWAJ DIP by Jim Watt. Kwaj 1975-83
  • Equal parts of creamed cheese and pineapple
  • Philadelphia creamed cheese
  • Crushed pineapple [separate liquid]
  • 1 bunch green onion tops [chop finely with scissors]
  • 4 tablespoons of Worcestershire sauce
  • ½ tablespoon of Hot Sauce [or to taste]
  • 1 can baby shrimp
  • Powdered garlic to taste]

Melt Philly cheese and stir in crushed pineapple adding enough liquid to aid in creaming process.  Add green onion tops, Worcestershire
sauce and shrimp until mix is creamy.  Add hot sauce, garlic powder and mix well. Cover and chill for 2 hrs.  Stir well before serving.  Better tasting the second day.

Jalapeno Black Bean Dip by Shermie Wiehe's sister - Sandra Wiehe -  Sanman Gardens
  • 1 -  15 oz. can black beans rinsed & drained

  • 1 -  8 oz. cream cheese softened

  • 1 -  Bunch (5-6) green onions

  • 1 -  Jar any fruit flavor Jalapeno Jam

  • 1 -  pkg. 3 blend Mexican Shredded Cheese

Layer black beans on plate, blend cream cheese & onions and spread over beans. Refrigerate. Just before serving spread (any fruit flavor) Jalapeno jam over cream cheese & top with shredded cheese. Serve with tortilla chips.
